Ingredients

  1. Brinjal: 500 gms.
  2. 1 big size potato
  3. 2 tomatoes, chopped.
  4. 1 teaspoon ginger paste
  5. Kashmiri chilly powder: 2 tsp
  6. Garam masala 1/2 teaspoon
  7. 1/4 teaspoon turmeric powder
  8. Garlic: 1/2 pod, chopped
  9. salt to taste
  10. oil for frying
  11. Coriander leaves for garnishing 
  12. Jeera: 1/2 tsp.
  13. Little water to add while sauting the tomatoes and lastly while cooking the aloo and brinjal


Method:

  • Cut the brinjal and potatoes into cubes and keep aside.
  • Make puree of the tomatoes.
  • Heat 2 tbsp of oil in a kadai. Add 1/2 tsp jeera at let is splutter. Add the sliced onion, ginger, and garlic. Let it fry till it becomes brown.
  • Deep fry the potato pieces too, switch off the gas stove. And keep aside the fried veggies.
  • Take a kadhai put 1 tablespoon oil in it and heat it
  • Add tomatoes puree .Stir till water evaporates
  • Add ginger paste and stir for a minute
  • Add cumin seeds and let it splutter
  • Now add haldi powder, red chilli powder, garam masala powder and salt and mix well
  • Add little water and mix well
  • Now add fried veggies and mix well
  • Your Baingan Masala is Ready To Serve.

For Meat ball :-
  1. 1 tsp.  ginger garlic paste
  2. 1 small onion, finely chopped
  3. 1 green chilli, finely chopped
  4. 1 tbsp.  fresh coriander leaves, chopped
  5. 250 gm.  boneless chicken cubes or mince
  6. 1 large bread slice
  7. 1/2 tsp.  salt
  8. 1/2 tsp.  red chilli powder
  9. 1/4 tsp.  garam masala powder
For Curry :-

  1. 2 - 3 small cardamom
  2. 2 inch piece cinnamon stick
  3. 1 tbsp.  coriander powder
  4. 1 to 1 1/2 tbsp.  red chillies powder
  5. 1/4 tsp.  turmeric powder
  6. Salt, to taste
  7. 1/2 tsp.  garam masala powder
  8. Pinch of each ( green cardamom, nutmeg & mace; ground )
  9. 2 tbsp.  fresh coriander leaves, chopped
  10. 1/4 cup oil
  11. 250 gm.  onions, thinly sliced
  12. 250 gm.  yoghurt
  13. 1 tsp.  cumin seeds
  14. 1 tbsp.   ginger garlic paste
  15. 6 - 8 black pepper
  16. 4 - 5 cloves
  17. 2 large cardamom

How to Make chicken meatball curry [Method]

  • Add chicken in a food processor and pulse until fine grind.
  • Remove crust from the bread slice, soak in enough water to just cover, then squeeze out any excess liquid.
  • Add bread and remaining ingredients to chicken and pulse until well combined.
  • Transfer to a bowl. With wet hands, shape meatballs mixture into medium sized balls ( about 8 - 10 ).
  • Refrigerate until ready to use ( You can freeze them at this point for later use ). Meanwhile, prepare the curry for meatballs.
  • Heat oil in a pan. Add sliced onion and fry on medium heat till light brown. Remove from oil and drain on absorbent paper.
  • Combine yoghurt, cumin seeds and fried onions in a blender and blend to a smooth paste.
  • Add ginger garlic paste, black pepper, cloves, cardamoms, cinnamon stick in the pan and fry for few seconds.
  • Add coriander powder, red chillies powder, turmeric powder and salt. Stir and add the blended paste.
  • Add water ( 1/2 cup or as required ) and cook, covered, on medium heat till water dries out and the curry leaves oil.
  • Now add the prepared meatballs in a single layer over curry. Add 1/2 cup water.
  • Cook on low heat, slightly covered, for about 15 minutes or until meatballs are cooked through. Do not stir meatballs with a spoon, just move the pan occasionally.
  • Add enough water to make a thin gravy and bring to a boil. Sprinkle garam masala, cardamom, nutmeg & mace powder.
  • Transfer to a serving bowl. Garnish with chopped coriander leaves.
  • Serve hot with Naan / Chapati.

  • Add wet mixture to dry and whisk until smooth. Pour batter into prepared pan.
  • Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  • Cool 10 minutes; then carefully run a knife around the edges of the pan, between the cake and the pan. Turn the pan over and let the cake ease out of the pan.

For rasgulla sponges


  1. 1 cup powdered milk ( Nestle Nido or any full fat powdered milk )
  2. 1 level tbsp.  plain flour
  3. 1 tsp.  baking powder
  4. 1 pinch cardamom powder
  5. 1 tbsp.  oil or ghee, melted
  6. 1 egg, beaten
For Ras (Sweet Milk Syrup)


  1. 1 liter / 4 cups milk
  2. 1/2 cup sugar
  3. 1 pinch cardamom powder
  4. 1/4 tsp.  Kewra water
  5. 2 tbsp.  pistachios, finely sliced

How To make Rasmalai 
  • Boil the milk with sugar and cardamom powder in a pan over medium heat.
  • Meanwhile, mix the powder milk, plain flour, baking powder, cardamom powder and oil in a bowl. Mix gently with hands.
  • Gradually add the beaten egg, a little at a time and mix till it forms a ball shape. ( Just add enough egg that the mixture comes together ).
  • Knead lightly to make a smooth dough. Don't knead too much.
  • Make equal sized, small, oval or round shape balls with a light hand and flatten them slightly.
  • Place the balls, one by one into the milk.
  • Cover the pan and cook on medium-high heat until the milk comes to a boil and the balls start to increase in size.
  • Reduce the heat to low and simmer for few minutes until the balls are soft and light.
  • Turn off the heat and add the kewra water.
  • Transfer to a serving dish, sprinkle pistachios.
  • Let it cool slightly at room temperature, then refrigerate until serving.

  6. Salt to taste 
 For Dosa Masala 
  1. 250 gm potatoes 
  2. 1 cup onions - finely sliced  
  3. 1 tsp chopped garlic 
  4. 1 tsp chopped ginger  
  5. 2 Tbsp chopped coriander leaves 
  6. Green chilies to taste
  7. Salt to taste
  8. 1 tsp mustard seeds 
  9. 1 sprig of curry leaves
For Red Chutney 
  1. 5-6 cloves garlic
  2. A dash of ginger
  3. 2 red chillies
  4. 1/2 onion, chopped
  5. 2 Tbsp fried chana dal
  6. Salt to taste

 How To Make Masala Dosa Method

  • Soak all the ingredients except semolina for about four hours.
  • Mix the semolina, salt and water.  Make a batter and keep it aside overnight to ferment.
For the dosa masala:
 
  • Boil and peel the potatoes and mash them.
  • Grind the garlic, coriander leaves, green chillies and onions to make a paste.
  • Heat oil in a pan and add the mustard seeds to it. 
  • Saute the remaining onions in it.
  • Add the paste and fry for some time.
  • Add the tomatoes, potatoes, salt and curry leaves.
For the red chutney 
  • Roast the chana dal, until slightly browned.
  • You could roast the onion, garlic and ginger for a minute also or just add them raw to the blender.
  • Mix all ingredients and blend to form a paste.
For the dosa 
  • Heat a little oil in a pan and spread the dosa batter over it.
  • Pour oil around the dosa and fry well.  
  • Smear the dosa with the red chutney.
  • Place some filling in the dosa, fold and serve hot.

  • First Grind together grated coconut, red chili paste, ginger-garlic paste, coriander, turmeric, paprika, black pepper, cumin, fennel, cinnamon, bay leaf and cloves into a paste.
  • Heat oil in a cooker.

  • Add the spice paste, sprinkle a little water and fry well, until the spices are roasted.
  • Add the mutton / lamb and stir well.

  2. Basmati Rice – 1 kg

  8. 2 Boiled eggs
  9. 1 gm Saffron (optional)

  11. Biriyani Masala Powder – 3 tsp
  12. Curry leaves-2 sprigs
  13. Chopped Mint leaves – 1 small bunch
  14. Chopped Coriander leaves – 1 bunch
  15. 1 BIG Lime 
  16. Curd – 1 cup

Ingredients To Marinate Chicken :

  1. 1/2 tsp Turmeric Powder
  2. 1 tsp Chilly Powder
  3.  Salt To taste

For Grinding !

  1. Green Chillies – 100 gms
  2. Garlic – 50 gms
  3. Ginger – 50 gms
  4. Poppy seeds soaked in water for 5-10 mts – 2 tsp Grind them together to a coarse paste.Keep them aside
How To Make Malabar Style Chicken Biryani

  • Mix together the ingredients for marinating chicken.Apply the mixture thoroughly on chicken pieces and allow it to stand for half an hour preferrably in refrigerator.
  • Wash and drain the rice well.Heat little ghee in a pan,and roast the rice for 4-5 Min. Add necessary water (Usually the measurement is like,for 1 cup rice 2 cups water) and salt into it, cook rice till soft and all the water is absorbed.Spread the rice in a flat serving dish,and sprinkle 3-4 drops of lime juice, allow it to cool.
  • Heat a little ghee in a pan and roast cashews and raisins till brown and keep it aside. Now add half of sliced onion and fry them until thay are well browned.Add more ghee / oil if needed. Drain them into a tissue paper and reserve. Now into the same oil, add marinated chicken pieces and shallow fry them for a while. Shy-nee says this can enhance the taste and also make the chicken pieces more firm.
  • Now heat another vessel and heat ghee/oil (preferably ghee for more taste, or you can combine ghee and oil together), add rest of the onions and saute them till translucent.Mix in tomatoes, salt and the ground paste and saute them for 2-3 mins. Stir in curd and lemon juice and saute until oil separates. Now add fried chicken pieces, mix well, cover and cook.
  •  When it is half done, add Coriander leaves,Mint leaves, curry leaves and 2 tsp Biriyani masala powder. Mix and allow the chicken to cook well in medium heat, until all water is absorbed and chicken pieces are coated with gravy.Switch off the stove.
  • Take a big vessel,spread chicken pieces along with the gravy in the bottom. Now add one layer of cooked rice over chicken. Sprinkle a little biriyani masala powder, fried onions, cashews, raisins and saffron (mixed in rosewater). Repeat the same for 2 more layers with chicken, rice and fried cashew-raisins-onions etc. Seal the vessel with aluminium foil and bake it for 15 mts. Mix thoroughly and serve hot with whole boiled eggs, Onion Salad, Pickle and Pappad.

  1. Boneless chicken cut into small cubes(1 whole chicken)  
  2. One Big tablespoon  Of tomato sauce
  3. One tablespoon of chili sauce [As Your Taste like]
  4. One Tablespoon Soya Sauce 
  5. 2 tablespoons vinegar
  6. 6 green chilies
  7. 4 big onions (Thinly chopped) 
  8. 1 heaped tablespoon corn flour
  9. 2 eggs
  10. 1 teaspoon ajinamoto
  11. Refined cooking oil 

How to make Chilli Chicken?

Wash the chicken pieces and dry them. Marinate the pieces with 1 tablespoon Soya sauce, 1 tablespoon vinegar, 1/2 tablespoon tomato sauce, 1/2 table spoon chili sauce and enough salt.
Beat the eggs and pour them on the chicken pieces. Add half a tablespoon corn flour and mix well the whole mixture. Allow it to stand for 2 hours.

Drain excess liquid and store in a container. Heat oil in a pan and fry the chicken pieces. Keep the fried pieces in a separate container. In the left over oil fry the green chilies and chopped onion slightly. Pour the excess liquid stored earlier. Stir continuously. Add the chicken pieces. Pour the rest of the sauces and a pinch of salt. Mix the 1/2 tablespoon corn flour with a little of water and pour in the pan. Add the ajinamoto. Stir well and serve hot.
