Ingredients
- 1/4 plus 1/8 cup flour
- 1/4 cup caster sugar
- 1 1/2 tbsp. cocoa powder
- 1/8 tsp. salt
- 1/4 tsp. baking soda
- 1/4 cup water
- 1/8 cup vegetable oil
- 1/2 tbsp. vinegar
- 1/2 tsp. vanilla
- Icing sugar, for dusting
Method
- Preheat oven to 180 C / 350 F. Grease a mini baking pan.
- In a bowl, stir together flour, sugar, cocoa powder, salt and baking soda.
- In a separate bowl, whisk water, oil, vinegar and vanilla.
- Add wet mixture to dry and whisk until smooth. Pour batter into prepared pan.
- Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
- Cool 10 minutes; then carefully run a knife around the edges of the pan, between the cake and the pan. Turn the pan over and let the cake ease out of the pan.
- Dust with Icing sugar and serve with whipped cream, chocolate frosting, ganache or chocolate sauce.
